Marylin's Moose Stew Recipe

I had always made this stew recipe with deer meat, but it works just as well with beef or moose now that I've got a moose in the freezer. :-) I always serve this with dumplings.

  1. Heat oil just to smoking, add meat all at once and brown rapidly until all cubes are well browned.
  2. Reduce heat and add onions, celery and spices.
  3. Cook until onions are tender.
  4. Add remaining ingredients and cook over medium heat until meat is tender and vegetables are very tender.
  5. Add more wine or beef broth if needed to keep meat from drying out.
  6. If using moose or less tender meat, don't add vegetables until meat has become tender.
